Although every effort has been made to select quality organizations for your to volunteer with, there are caveats. Do your own homework.
Call & reach a senior contact person, find out how receptive they are to work with volunteers (remember, some contacts/organizations will often say yes but haven't a clue as to how. Second, if you can, visit the organization, talk to the people & assess its receptivity to volunteers & quality of the organization.
Volunteerism is common among foreigners, but not part of Cebuano culture. Changing that culture is hard. When most Cebuanos think volunteer, they think that the organization will pay for transport, lunch/food, etc. While the organizations rarely have funds to do that. So often only the well-off Cebuanos can afford the transport, etc. to actively participate — and they are not so inclined toward volunteerism. Some will volunteer only if they can get college/school credit — and once they fulfill that they have no further interest. End of their participation. Again, changing the culture is hard.
I suggest you contact the organization by email and/or phone long before coming. And realize that other than the "highly recommended" below (noted with **), the other organizations take occasional volunteers, and are much less prepared for you. They may say "yes", "OK, come", but when you get there they don't know how to effectively use your skills. They may even be surprised you actually came. It's a Filippino thing. They tell you what they think you want to hear. If you want a good experience, then stick with the top ones on my list below. But still concretely nail down when, what you'll do, the admin/housing/food arrangements, who is responsible for what, what they recommend, etc. Do that several times. By phone, in writing. Be completely satisfied first, before coming.
Second, if you concentrate on street people/children, remember that your safety should come first. Be very careful about the safety arrangements of any organizations with respect to their volunteers -- and always carry a few hundred pesos (no cellphone, wallet) in case of robbery. Having no money on you invites violence if robbed.
I know of no reported safety problems vis-a-vis the volunteering, but always be prepared, just in case. Taking jeepneys or commercial buses is far riskier than taxis, private cars or private buses.

100+ boys live, eat and study for free at the Sapak Farm/Home/Schol, all in different ages from 9 to 20 years old. When the boys graduate high-school they cannot stay at the farm, but if they are lucky they get scholarships and go to college or they go out and find a job. The boys has choosen to be here and is free to leave if they want to. Father Emmanuel V. Non is truly the primus motor for this place. He is headmaster, priest and administrator. He is age 93 (Jesuit priest - founder of this 40-year-old school). A very worthy organization, running on minimal funding.
